Title: Aussie Christmas Ice-Cream Pudding

Yield: 8 Servings

1 Mango, diced.
3/4cPineapple juice
1lIce-cream, softened.
200mlCream, double, lightly sweetened and whipped.
1/2cNuts, macadamia, chopped.
1 1/2cWine, Midori
  Food colouring, green TO MAKE YOUR OWN ICE-CREAM ALL INGREDI
1cMilk [+]
2cCream [+]
3 Egg yolks [+]
3/4cSugar [+]
1tbGlucose syrup [+]
1/2cNuts, macadamia, [+] chopped.
1 1/2tbWine, Midori [+]
  Food colouring, green [+]
  Blue gum leaves, [+] non-edible, for garnish.
  Lime topping -OPTIONAL- [+]

In the bottom of a lightly greased pudding bowl, place diced mango and pineapple juice. Freeze.

IF USING MANUFACTURED ice-cream, mix softened ice-cream, lightly sweetened and whipped cream and chopped macadamia nuts in large bowl. Add Midori and a few drops of green colouring. Create large green swirls in the mixture. Place ice-cream mixture on top of frozen mango, level base and return to freezer. Freeze.

IF MAKING YOUR OWN ice-cream, combine milk, cream, egg yolks, sugar, glucose syrup and macadamia nuts, then add Midori and green flavouring and create large green swirls in the mix.

Warm mixture, just like you would an egg custard. Mixture is cooked when you gently blow on the back of your mixing spoon and a rose-like pattern appears. If you have a thermometer, heat to 81^C, then chill and churn in an ice-cream machine. [Or else place prepared ice-cream mixes into a freezer, and whip them with an electric mixer at intervals during freezing.] Repeat for the second flavouring.

Then as with the purchased ice-cream, place ice-cream mixture on top of frozen mango, level base and return to freezer. Freeze.

TO SERVE your Aussie Ice-Cream Pudding, just wipe bottom and sides of pudding bowl with warm cloth. Up-end on to a large serving plate and take to the table. It looks rather stupendous actually. Drizzle with lime topping if desired.

Cut into long thin slices and garnish with non-edible blue gum leaves.
